What to expect:
- What is game meat? Wild meats (deer, boar, rabbit, pheasant, etc.) vs. farmed meats.
- Discuss sustainable sourcing, legal hunting regulations, and the role of game in conservation efforts.
- Maintaining the sharpness of your knives.
- Skinning a deer and preparing the hide for tanning.
- Identify and properly cut various sections of meat, including tender and tougher cuts, and understand how to use each part for different dishes.
- Mince deer meat, mix with seasonings and fat, stuff into casings, and prepare for cooking or curing.
